Seriously this salad has been rocking my world this summer. It’s great because you can grab and go, prep for a couple of days ahead even.
I won’t give quantity because it doesn’t really matter.
Broccoli
Cauliflower
Brussels Sprouts cut into quarters
Carrots
French Beans
Green Beans
Orange Zest 1/3 of the orange
Any other vegetable you like
Chia Seeds
Apple Cider Vinegar
Olive Oil
Cold Water
Method:
- Large pot of boiling water, place vegetables into the boiling water and cover. Grab out a colander place into the sink ready to run the cold water tap over the veggies.
- Once the vegetables come to boil drain into the colander and start running cold water over them, if you have refrigerated cold water run that over it as well. Sprinkle orange zest over the vegetables. Place vegetables into a container and pop into the fridge. You can use these when you want them.
- Just before serving sprinkle chia seeds, a small amount of apple cider vinegar and olive oil (1 teaspoon of each per person generally)
- Enjoy.
