From somewhere in the Middle East where everything comes with herbs, spices, chili and tomato comes this exciting breakfast of champions. This breakfast is packed full of goodness including proteins and minerals and if you add a slice of toast and some avocado you will get your carbs and good fats as well.
Ingredients
1 Onion roughly chopped
½ of a small sweet potato grated or v sliced
1 medium capsicum roughly chopped
2 cloves of garlic finely chopped
4 tomatoes diced
4 tablespoons of tomato paste
¼ of a cup of water
1 teaspoon of paprika
1 teaspoon of cumin
¼ of a teaspoon of ground hot chili
1 teaspoon of Honey
Salt and Pepper to taste
4 eggs
Small amount of butter (for frying)
Utensils
1 Medium Crock Pot
1 Stirring spoon or spatula
1 large serving spoon for scooping out the awesomeness
Method
Step 1: Place the crock pot on the stove over medium heat and put a little butter in the bottom for frying, fry off the onions, sweet potato and garlic.
Step 2: Reduce the heat to a simmer and add tomatoes, tomato paste, water, spices, Honey and a bit of salt and pepper.
Step 3: When everything is simmering nicely make four wells one in each corner of the crock pot and carefully crack the eggs into them.
Step 4: Cover and allow to simmer
Step 5: once the eggs are cooked to your liking scoop them out onto your plates taking some of the surrounding mixture
Extras: This dish goes well with a slice of toast under each of the eggs and half an avocado on the side.
