Another great dish, perfectly easy and so tasty.

Salmon & Raw Salsa
Ingredients:
Salmon Steak skin on, 1 per person
Baby Spinach
Pinch of Salt
Salsa:
Cucumber deseeded and diced
Yellow or Red Pepper / Capsicum
1/2 Red Onion
Tomato deseeded and diced
Avocado diced (when in season)
Garlic finely chopped / minced
Chilli finely chopped / minced
Dash of Balsamic Vinegar
Dash of Olive Oil
Pinch of Salt and Pepper
Method:
- Turn grill on and place salmon skin side up into the grill. Turn Salmon over when skin crispys up.
- Grab a pot pure a small amount of water in the base, place baby spinach and pinch of salt into the pot. Set aside. Remember what looks like a large amount of spinach won’t be once wilted.
- Chop & Dice all salsa ingredients place everything into a bowl including salt, pepper, oil and vinegar toss through. Set aside
- When Salmon is about done turn the heat on to cook the spinach till just wilted.
- Using tongs place spinach onto the plate, salmon on top of that followed by the salsa mixture. Serve and enjoy.
