
Nutty Salad With Chicken
This salad dressing would have to be one of Tiff’s all time favorites. Great texture and awesome taste and by far the easiest salad dressing you’ll ever make.
Ingredents:
Chicken Breast Grilled
5 Carrots ribboned (after pealing skin, peal carrot until down to the core into ribbons)
2 Large Handfuls of Spinach roughly chopped
1 Handful of Red Cabbage chopped
1/3 Cup of Mint Shredded
1/2 Large Cucumber sliced
Dressing:
Handful of Cashews (soaked in water for 3hrs to overnight)
1/2 handful of Almonds (soaked in water for 3hrs to overnight)
2 Fresh Dates (soaked dried dates) Pitted
3/4 Cup Coconut Cream
1/2 Cup Shredded Coconut
2 Garlic Cloves finely chopped
1 Teaspoon Curry Powder
1/4 Lime juiced
1/2 Teaspoon of Ginger finely Chopped
1 Small Red Chili
Method:
- Place all dressing ingredients into a blender, blend and then pop into the fridge while you continue.
- Cook chicken under the grill.
- While the chicken is cooking prepare the salad.
- Just before serving toss dressing through the salad.
