
Bipy Fit Bars
A tasty alternative to the store bought muesli bars. Freeze them and take one to work with you, or put one in in with the kids school lunches, they will be thawed and delicious by breaktime. This is not only better for you it is also more tasty.
2 cups x rolled oats
2 cups x wholemeal plain flour
1 cup x shredded coconut
2 cups x mixed dried fruit
1/2 cup x pepitas
1/2 cup x sunflower kernels
1/4 cup x linseed (ground)
1.5 teaspoons x baking powder
3 large x eggs lightly beaten
130g x butter softened (not margarine)
3/4 cup x honey
3/4 cup of coconut milk
Method:
- Pre-heat oven to 165 degrees Celsius / 320 degree Fahrenheit, line baking tin (30cm x 20cm) with grease proof paper.
- Place all ingredients into a large mixing bowl, mix using your hands till the mixture is even. (grind the linseed)
- Put mixture into the baking tin, push the mixture down until it is even, flat and firm.
- Place into the oven for about 20 minutes or until the edges become browned. Remove from oven, cut while in the tray, remove using a spatula, makes about 24 bars. I place them into a air tight container layering with grease proof paper and place them in the freezer, this way they last and are perfect for when you are in need of a snack.
- Little tip: sometimes it’s easier to cut them a little larger then after they have been frozen to cut them to the preferred size or once cooled place them into the freezer tin and all for a couple of hours then cut.
