
Pancakes with Blueberry Date Dressing
These are so good. You can serve them with ice-cream or maple syrup. I have used a Blueberry Date mixture and ground nuts. They are so good you won’t even know they are gluten free.
Ingredients:
1 x Cup Buckwheat Flour
1 x Cup Almond Meal
2 x Teaspoons Baking Powder
1.5 x Teaspoon Baking Powder
1/2 x Teaspoon Salt
1 x Cup Whole Cream Milk
1 x Cup Almond Milk
2 x Eggs
1 x Tablespoon Date Puree
1/2 x Teaspoon Vanilla Extract
Ghee for skillet
Method:
1. Place all ingredients other than ghee into a food processor, blend until evenly combined. (Add slightly more buckwheat if you feel the mixture could be thicker)
2. Heat ghee in skillet.
3. Scoop small amounts making a pikelets sized circle, once bubbles start forming flip.
4. Makes heaps, I store them in the freezer, place baking paper between each layer before freezing.
