Everyone love this with a little mash potato

Curried Sausages
Ingredients:
8-12 Pork Sausages (Left overs this way for lunch)
4 Celery Sticks
2 Mangoes (If not in season 400g Tin, in natural juice)
1 Tablespoon Curry Powder
1 Fresh Chili Finely Chopped
2-4 Garlic Cloves Finely Chopped
1 Teaspoon Mustard Seeds
2 Cups Chicken Stock
Packet French Onion Soup Mix
Peas
Carrots Cubed
Fresh Coriander Chopped
Method:
- Prink sausages with knife before grilling. Grill until cooked.
- In a large pot Place celery cut into 1 cm pieces, Mango flesh (if can drain and add flesh), curry powder, chili, garlic, mustard seeds, stock and soup mix. Begin to heat while the sausages cook.
- Once sausages have cooked cut into bite size pieces and add to the pot.
- Bring to boil, stirring continuously. If not as thick as you would like add a little cornflour and water mixture.
- Add peas and carrot cook for 2 min. Take off the heat.
- Serve with either mashed potato, sweet potato, pumpkin or rice with a side of vegetables. Sprinkle coriander on top and enjoy.
