Curried Sausages

Ingredients:

8-12 Pork Sausages (Left overs this way for lunch)

4 Celery Sticks

2 Mangoes (If not in season 400g Tin, in natural juice)

1 Tablespoon Curry Powder

1 Fresh Chili Finely Chopped

2-4 Garlic Cloves Finely Chopped

1 Teaspoon Mustard Seeds

2 Cups Chicken Stock

Packet French Onion Soup Mix

Peas

Carrots Cubed

Fresh Coriander Chopped

 

Method:

  1. Prink sausages with knife before grilling. Grill until cooked.
  2. In a large pot Place celery cut into 1 cm pieces, Mango flesh (if can drain and add flesh), curry powder, chili, garlic, mustard seeds, stock and soup mix. Begin to heat while the sausages cook.
  3. Once sausages have cooked cut into bite size pieces and add to the pot.
  4. Bring to boil, stirring continuously. If not as thick as you would like add a little cornflour and water mixture.
  5. Add peas and carrot cook for 2 min. Take off the heat.
  6. Serve with either mashed potato, sweet potato, pumpkin or rice with a side of vegetables. Sprinkle coriander on top and enjoy.
