Quick easy healthy, colorful and full of taste. This Satay recipe is always a winner

Satay Zucchini Noodles
Sauce:
1 teaspoon x Coconut Oil
1 x Brown Onion diced
4 x Garlic Cloves finely chopped
1/2 teaspoon x Hot Chili Powder
1 teaspoon x Curry Powder
2-3 cup x Vegetable stock (Depending on the thickness you desire)
1-1.5 cups x Crunchy Peanut Butter
Veggies:
5 x Zucchini Noodled (Use a Spirooli or cut length ways finely)
2 x Carrots V sliced or grated
300g x Green Beans cut in half
1.5 cups x Shredded Red Cabbage
10 x Brussels sprouts diced
Meat:
This dish can be made with any meat you desire.
Method:
1. Heat oil and cook Onions and Garlic till soft in a saucepan, add all other ingredients
2. Stir till consistent in texture and set aside
3. Slice and dice all vegetables.
4. Cook meat you would like to have with the vegetables
5. Heat wok and place half of the vegetable contents into the wok along with a few table spoons of satay sauce.
6. using a spatula mix the sauce with the vegetables, once heated through serve. Enjoy
