
I went through a phase where I wanted to stop using store bought packet mix ingredients. I found that they usually contained sugar, flour, extracts and other weird additives. This was the recipe I came up with to replace the beef taco seasoning.
Mince Sauce
1 kg lean beef mince
4 cloves garlic
1 teaspoon fresh ginger
3 medium chilis
2 onions
1 large capsicum
1 large zucchini
2 carrots
6 mushrooms
1/4 teaspoon Paprika
1 heaped teaspoon cumin
Serving suggestions
6 Tortillas
2 Tomatoes
1 Lebanese cucumber
2 cups of baby spinach
1 cup of grated cheese
Mince Sauce Method
Step 1 finely chop the garlic, ginger and chilis ( this is best done in a rocket blender)
Step 2 coarsely chop the onions, capsicum, zucchini and mushrooms into small pieces.
Step 3 grate the carrot
Step 4 add all ingredients to a large pan and heat on medium heat bringing the mixture to a low boil, stirring occasionally to prevent the mixture from sticking to the bottom. Simmer the mixture for around 45 minutes or until cooked thoroughly.
Step 5 Slice up the tomatoes, cucumber and place on a serving platter with the cheese and baby spinach. Heat your tortillas prior to serving.
